SWEET POTATO COOKIES

Ingredients:

  • 1 medium sweet potato, peeled and cubed
  • 1 cup all-purpose flour

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened

  • 1/2 cup raisins or chocolate chips (optional)

Instructions:

  1. Cook the Sweet Potato: Place the sweet potato cubes in a medium saucepan and cover with water. Bring to a boil and cook until tender, about 10-12 minutes. Drain and mash the sweet potato until smooth. You should have about 1/2 to 3/4 cup of mashed sweet potato. Set aside to cool.
  2. Prepare the Cookie Dough: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, oats, baking soda, cinnamon, nutmeg, and salt. In a separate large bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and smooth.
  3. Mix the Wet Ingredients: Add the mashed sweet potato, egg, and vanilla extract to the butter and sugar mixture. Beat until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
  4. Add Optional Mix-ins: If using, fold in the walnuts or pecans and raisins or chocolate chips for added texture and flavor.
  5. Shape the Cookies: Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon or your fingers.
  6. Bake: Bake for 12-15 minutes, or until the cookies are lightly golden around the edges. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
