Ingredients:

  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 4 large flour tortillas
  • 1 avocado, sliced
  • Salsa, for serving
  • Optional: shredded cheese, sour cream, and hot sauce

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the sweet potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, cumin, chili powder, smoked paprika, salt, and black pepper. Spread them out on the baking sheet in an even layer.
  3. Roast the sweet potatoes for 20-25 minutes, or until tender and lightly caramelized, stirring halfway through.
  4. Prepare the filling: In a medium bowl, combine the roasted sweet potatoes, black beans, corn, chopped cilantro, and lime juice. Mix gently to incorporate.
  5. Assemble the burritos: Lay a tortilla flat on a clean surface. Add a generous scoop of the sweet potato and bean mixture down the center. Top with slices of avocado, and if desired, sprinkle with cheese or add a dollop of sour cream.
  6. Fold the burrito by folding the sides inward and rolling from the bottom up to enclose the filling.
  7. Warm the burritos: Optionally, place the assembled burritos in a dry skillet over medium heat for 1-2 minutes per side to crisp the tortilla.
  8. Serve with your favorite salsa and a splash of hot sauce if you like an extra kick.

Enjoy your Sweet Potato Burritos as a nutritious, filling meal that’s easy to customize with your preferred toppings and sides!
