SWEET POTATO AND COCONUT SOUP

Sweet Potato and Coconut Soup is a creamy, flavorful, and comforting dish that brings together the natural sweetness of sweet potatoes and the richness of coconut milk. This warming soup is perfect for cool evenings or whenever you’re craving something hearty yet light. With a touch of spice and the silkiness of coconut milk, it’s a deliciously nourishing meal.

Ingredients:

  • 2 tbsp olive oil or coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 large sweet potatoes, peeled and diced
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth (or chicken broth)
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • ½ tsp ground coriander (optional)
  • 1 tsp curry powder (optional, for extra flavor)
  • Salt and pepper, to taste
  • Juice of 1 lime (optional, for brightness)
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions:

  1. Sauté the Aromatics:
    • In a large pot, heat the olive oil or coconut oil over medium heat. Add the chopped onion and sauté for 4-5 minutes, until softened and translucent.
    • Stir in the garlic and grated ginger, and cook for another 1-2 minutes until fragrant.
  2. Add the Spices and Sweet Potatoes:
    • Add the diced sweet potatoes to the pot, along with the ground cumin, cinnamon, coriander, and curry powder (if using). Stir well to coat the sweet potatoes with the spices and cook for about 2-3 minutes.
  3. Add the Broth and Coconut Milk:
    • Pour in the vegetable broth and coconut milk, stirring to combine. Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the sweet potatoes are soft and cooked through.
  4. Blend the Soup:
    • Once the sweet potatoes are tender, use an immersion blender to blend the soup until smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a blender and blend until smooth.
  5. Season and Serve:
    • Season the soup with salt, pepper, and lime juice (if using) to taste. Stir well and let the flavors meld for another 2-3 minutes.
    • Ladle the soup into bowls and garnish with fresh cilantro or parsley.
