Instructions:

  1. Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, and salt. In another bowl, whisk the eggs, milk, water, melted butter, and vanilla extract until well combined.
  2. Combine the Mixtures: Slowly pour the wet ingredients into the dry ingredients, whisking constantly to avoid lumps. Continue to whisk until the batter is smooth and has a thin, pourable consistency. Let the batter rest for 15-20 minutes to allow the flour to fully hydrate.
  3. Heat the Pan: Heat a non-stick skillet or crepe pan over medium heat. Lightly grease it with butter.
  4. Cook the Crepes: Pour about 1/4 cup of batter into the pan, tilting it in a circular motion to spread the batter evenly across the bottom. Cook for about 1-2 minutes, or until the edges begin to lift and the bottom is lightly golden. Flip the crepe and cook for another 30 seconds to 1 minute.
  5. Stack the Crepes: Transfer the crepe to a plate and repeat with the remaining batter, adding more butter to the pan as needed. Stack the crepes with parchment paper between them to prevent sticking.
