Ingredients

  • 1/2 cup pineapple juice
  • 1/4 cup white vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup onion, diced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Cooked rice, for serving
  • Fresh cilantro or green onions, for garnish (optional)

Instructions

  1. Season the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
  2. Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, until they are nicely browned and cooked through. Remove the chops from the skillet and set them aside.

  4. Combine and Simmer: Return the pork chops to the skillet, spooning some of the sauce over them. Let the pork chops simmer in the sauce for about 5-7 minutes to absorb the flavors. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for an additional minute until thickened.
  5. Serve: Plate the pork chops and spoon the sweet and sour sauce with vegetables over the top. Garnish with fresh cilantro or green onions if desired.
