Summer Rolls, also known as Vietnamese fresh spring rolls, are a light, refreshing, and healthy dish perfect for warm weather or as a fresh appetizer. These delicate rolls are made with rice paper wraps filled with a colorful array of ingredients such as fresh vegetables, herbs, shrimp or tofu, and vermicelli noodles. Served with a tangy peanut or hoisin dipping sauce, they offer a satisfying blend of crisp textures and vibrant flavors. Easy to customize with your favorite fillings, summer rolls are not only beautiful to serve but also a nutritious, low-calorie option for a snack or meal.

Ingredients:

For the Rolls:

  • 12 rice paper wrappers
  • 1 cup cooked vermicelli noodles
  • 12 large cooked shrimp, halved (or tofu for a vegetarian option)
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 cup fresh herbs (mint, basil, cilantro)
  • 1 cup lettuce leaves or Napa cabbage, chopped
  • 1 avocado, sliced (optional)

For the Dipping Sauce:

  • ¼ cup hoisin sauce
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1-2 tbsp water (to thin)
  • Crushed peanuts (optional for garnish)

Instructions:

  1. Prepare the Ingredients: Cook the vermicelli noodles according to package instructions, drain, and set aside. Prepare the shrimp by slicing them in half lengthwise, and chop or slice the vegetables and herbs.
  2. Assemble the Rolls: Fill a large shallow bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds, just until it softens. Lay it flat on a clean surface.
  3. Layer the Fillings: In the center of the wrapper, place a few pieces of shrimp (or tofu), a small handful of vermicelli noodles, cucumber, carrot, herbs, and lettuce. You can add avocado slices for extra creaminess.
  4. Roll the Summer Rolls: Fold the sides of the wrapper over the filling, then carefully roll it up from the bottom like a burrito, keeping it tight but gentle to avoid tearing. Repeat with the remaining wrappers and fillings.
  5. Make the Dipping Sauce: In a small bowl, whisk together the hoisin sauce, peanut butter, soy sauce, lime juice, and water until smooth. Adjust the thickness with water if needed, and sprinkle with crushed peanuts for garnish.
  6. Serve: Serve the summer rolls immediately with the peanut dipping sauce on the side.
