Summer Peach Cake

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 3-4 ripe peaches, peeled, pitted, and sliced
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Arrange the peach slices on top of the batter in a circular pattern.
  7. In a small bowl, combine the brown sugar and cinnamon, and sprinkle it evenly over the peaches.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
