Ingredients

  • 1 1/2 to 2 lbs flank steak
  • 2 cups fresh spinach leaves
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup mozzarella or provolone cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as basil or parsley), chopped
  • Kitchen twine for tying the steak

Instructions

  1. Prepare the steak: Preheat your oven to 375°F (190°C). Butterfly the flank steak by cutting it horizontally across the middle (without cutting all the way through), then open it like a book. Gently pound the steak with a meat mallet to even out the thickness.
  2. Season the steak: Season the inside of the steak with salt and pepper, and set aside.
  3. Prepare the filling: In a skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant. Stir in the spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly. In a bowl, combine the cooked spinach, sun-dried tomatoes, mozzarella, Parmesan, and chopped herbs.
  4. Stuff the steak: Spread the spinach and cheese mixture evenly over the open flank steak, leaving a little room around the edges. Carefully roll the steak up from one long end to the other, making sure the filling stays inside. Secure the rolled steak with kitchen twine, tying it at intervals to keep it intact.
  5. Sear and bake the steak: In an oven-safe skillet, heat a little olive oil over medium-high heat. Sear the rolled steak on all sides until browned, about 2-3 minutes per side. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the steak reaches your desired level of doneness (about 135°F for medium-rare).
  6. Rest and slice: Remove the steak from the oven and let it rest for 5-10 minutes before slicing. Cut the steak into 1-inch slices and serve.
