Strawberry White Chocolate Scones

These Strawberry White Chocolate Scones are a delightful twist on the classic scone recipe. Bursting with juicy strawberries and creamy white chocolate chips, these scones offer a perfect balance of sweetness and tartness. The flaky, tender dough melts in your mouth, while the bits of strawberry add a refreshing fruitiness. Enjoy them with a warm cup of tea or coffee for a comforting breakfast or an indulgent afternoon treat. These scones are not only delicious but also quick and easy to prepare, making them a perfect choice for weekend brunch or a special occasion.

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 3/4 cup heavy cream, plus more for brushing
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1/2 cup white chocolate chips

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a small bowl, mix together the heavy cream and vanilla extract. Pour this mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in the strawberries and white chocolate chips carefully to avoid over-mixing the dough.
  6. Transfer the dough onto a lightly floured surface and gently knead it a few times. Pat the dough into a round disk, about 1 inch thick. Cut the dough into 8 equal wedges and place them on the prepared baking sheet.
  7. Brush the tops of the scones with a little heavy cream for a golden finish.
  8. Bake for 15-18 minutes, or until the scones are golden brown on the edges.
  9. Remove from the oven and allow the scones to cool slightly on a wire rack. Serve warm or at room temperature.

These scones are best enjoyed the day they are baked, but they can be stored in an airtight container at room temperature for up to two days. For an extra touch, drizzle a bit of melted white chocolate over the scones once they have cooled.
