Strawberry Shortcake Ice Cream Bars are a nostalgic and refreshing treat, perfect for hot summer days or when you’re craving something sweet and fruity. These bars feature layers of creamy vanilla ice cream, a strawberry center, and a crunchy shortcake crumb coating that mimics the classic flavors of strawberry shortcake. Easy to make at home, they combine rich textures with the sweetness of fresh strawberries, delivering a delightful dessert that both kids and adults will love.

Ingredients:

For the Ice Cream Bars:

  • 2 cups vanilla ice cream, softened
  • 2 cups strawberry ice cream or sorbet, softened
  • 1 cup fresh strawberries, chopped

For the Crumb Coating:

  • 1 cup crushed shortbread cookies
  • 1/2 cup freeze-dried strawberries, crushed
  • 2 tbsp unsalted butter, melted

Instructions:

  1. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. Spread the vanilla ice cream evenly into the bottom of the dish. Freeze for 30 minutes, or until slightly firm.
  3. In a small bowl, combine the softened strawberry ice cream or sorbet with the chopped strawberries. Spread this layer over the vanilla ice cream. Freeze for at least 2 hours, or until fully set.
  4. While the ice cream is freezing, prepare the crumb coating. In a medium bowl, mix together the crushed shortbread cookies, crushed freeze-dried strawberries, and melted butter until well combined.
  5. Remove the ice cream layers from the dish and cut them into bars. Gently press the crumb coating onto all sides of each bar.
  6. Place the coated bars back into the freezer for 1-2 hours to set completely.
