STRAWBERRY GALETTE

A Strawberry Galette is a rustic and easy-to-make dessert, featuring juicy strawberries wrapped in a flaky, buttery crust. It’s less fussy than a traditional pie but just as delicious, with its free-form shape giving it a charming, homemade look. This galette is perfect for showcasing fresh strawberries and makes a beautiful dessert for any occasion.

Ingredients:

For the crust:

  • 1½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes
  • ¼ cup ice water (add more if needed)

For the filling:

  • 3 cups fresh strawberries, hulled and sliced
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

For the topping:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon turbinado or granulated sugar (for sprinkling)
  • Optional: Whipped cream or vanilla ice cream, for serving

Instructions:

  1. Prepare the crust:
    • In a large bowl, whisk together the flour, sugar, and salt. Add the cold butter cubes and use a pastry cutter (or your fingers) to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces.
    • Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough comes together. If the dough is too dry, add a bit more water.
    • Gather the dough into a ball, flatten it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the filling:
    • In a medium bowl, combine the sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the strawberries are coated and the mixture is evenly combined.
  3. Roll out the dough:
    • Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the chilled dough into a roughly 12-inch circle, about ¼ inch thick. Transfer the dough to a parchment-lined baking sheet.
  4. Assemble the galette:
    • Spoon the strawberry mixture onto the center of the rolled-out dough, leaving about a 2-inch border around the edges. Fold the edges of the dough over the strawberries, pleating as you go to create a rustic, free-form crust.
  5. Add the finishing touches:
    • Brush the folded edges of the dough with the beaten egg and sprinkle with turbinado or granulated sugar for extra crunch and sweetness.
  6. Bake the galette:
    • Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Cool and serve:
    • Allow the galette to cool for about 10 minutes before slicing. Serve warm or at room temperature, with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.

Enjoy this rustic and delicious Strawberry Galette, a perfect way to showcase fresh strawberries in a beautiful, easy-to-make dessert!
