Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda

  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced (or 1/2 cup freeze-dried strawberries, crushed)
  • 1/2 cup white chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. Gently fold in the diced strawberries and white chocolate chips (if using).
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the cookies are set.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
