  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar

  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cups fresh strawberries, hulled and halved
  • 1 tbsp turbinado sugar (for sprinkling, optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Add the egg and vanilla extract, beating until well combined.
  4. Add the buttermilk and dry ingredients: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.
  5. Prepare the cake: Pour the batter into the prepared cake pan and smooth the top. Arrange the halved strawberries, cut side down, on top of the batter. Lightly press them into the batter. Sprinkle the turbinado sugar on top, if using.
  6. Bake: Bake for 30-35 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  7. Cool and serve: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve as is or with whipped cream for an extra treat.
