The key to a great stir-fry is high heat, which allows the vegetables to cook quickly while retaining their crispness and vibrant color. Packed with nutrients and bursting with flavor, this stir-fried vegetable dish is perfect for busy weeknights or when you want a light, satisfying meal.

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snow peas or snap peas
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 1/2 cup sliced mushrooms
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (optional for extra flavor)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar (optional)
  • 1/4 teaspoon red pepper flakes (optional for heat)
  • Sesame seeds and chopped green onions for garnish

Instructions:

  1. Heat the Oil: In a large wok or skillet, heat the vegetable oil over medium-high heat.
  2. Sauté Aromatics: Add the sliced onion, minced garlic, and minced ginger to the wok. Stir-fry for about 1-2 minutes until fragrant and the onions begin to soften.
  3. Cook the Vegetables: Add the bell peppers, broccoli, snow peas, carrot, zucchini, and mushrooms to the wok. Stir-fry for 4-5 minutes, stirring constantly, until the vegetables are tender-crisp.
  4. Add the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, sesame oil, sugar, and red pepper flakes. Pour the sauce over the vegetables and toss to coat evenly. Stir-fry for another 1-2 minutes until the vegetables are fully coated and the sauce is heated through.
  5. Garnish and Serve: Remove the stir-fry from the heat and transfer to a serving dish. Garnish with sesame seeds and chopped green onions. Serve immediately with steamed rice or noodles.

This Stir-fried Vegetable dish is a delicious and nutritious way to enjoy a variety of fresh vegetables. It’s a perfect option for a quick and healthy meal that can be customized with your favorite vegetables and proteins.
