Tender pieces of chicken are stir-fried with fresh vegetables and tossed in a savory sauce made with soy sauce, garlic, and ginger. Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 1 bell pepper, sliced
  • 2 carrots, julienned
  • 1 zucchini, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp soy sauce (for the sauce)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Marinate the chicken: In a bowl, combine the sliced chicken with 2 tbsp soy sauce, oyster sauce, and cornstarch. Toss to coat and set aside to marinate for 10-15 minutes.
  2. Prepare the sauce: In a small bowl, whisk together 2 tbsp soy sauce, rice vinegar, sesame oil, and sugar. Set aside.
  3. Stir-fry the chicken: Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 4-5 minutes until cooked through and lightly browned. Remove the chicken from the pan and set aside.
  4. Cook the vegetables: In the same pan, add the remaining 1 tbsp of oil. Stir-fry the onions, bell peppers, carrots, zucchini, garlic, and ginger for 3-4 minutes, or until the vegetables are tender but still crisp.
  5. Combine and serve: Return the cooked chicken to the pan, pour in the prepared sauce, and toss everything together until well-coated and heated through. Remove from heat.
  6. Garnish and serve: Garnish with chopped green onions and sesame seeds, if desired. Serve hot over steamed rice or noodles.
