Recipe: Steak Quesadillas

Ingredients:

  • 1 lb flank or skirt steak
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1 bell pepper, thinly sliced (any color)
  • 8 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • Optional for serving: salsa, sour cream, guacamole

Instructions:

  1. Prep and Cook the Steak:
    • Season the steak generously with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add the steak and cook for about 5-6 minutes per side, or until it reaches your desired level of doneness. Remove from heat, let rest for a few minutes, then slice against the grain into thin strips.
  2. Sauté Vegetables:
    • In the same skillet, add more oil if needed, and sauté the onions and bell peppers until they are soft and slightly caramelized, about 6-8 minutes. Remove from heat.
  3. Assemble Quesadillas:
    • Lay out four tortillas on a flat surface. Distribute the sliced steak evenly among the tortillas, followed by the sautéed onions and peppers, and then sprinkle generously with cheese. Top with the remaining four tortillas.
  4. Cook Quesadillas:
    • Wipe the skillet clean and return to medium heat. Place one assembled quesadilla in the skillet, and cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese has melted. Repeat with the remaining quesadillas.
  5. Serve:
    • Cut each quesadilla into wedges and serve hot with optional sides like salsa, sour cream, or guacamole.

Steak quesadillas are not only delicious but also versatile, making them perfect for repurposing leftover steak or as a way to spice up your meal rotation. They’re quick to prepare, packed with flavor, and satisfying, making them a favorite for families and gatherings alike.
