Squash Salad With Kale And Roasted Garlic Dressing

For the Roasted Garlic Dressing:

  • 1 head of garlic

  • 1 tablespoon honey or maple syrup
  • Salt and pepper, to taste

Instructions:

  1. Roast the Squash: Preheat your oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper. Spread it out on a baking sheet and roast for 25-30 minutes, or until the squash is tender and golden brown. Set aside to cool slightly.
  2. Prepare the Dressing: While the squash is roasting, prepare the roasted garlic. Cut the top off the garlic head to expose the cloves, drizzle with a bit of olive oil, and wrap in aluminum foil.
