SPRING POTATO SALAD

This Spring Potato Salad is light, fresh, and full of seasonal ingredients like new potatoes, fresh herbs, and crisp veggies. Ingredients:

  • 2 pounds baby potatoes or new potatoes
  • 1 cup fresh peas (blanched) or frozen peas (thawed)
  • 3-4 radishes, thinly sliced
  • 3 green onions, chopped
  • ¼ cup fresh herbs (parsley, dill, chives), chopped
  • 2 tablespoons capers (optional, for added brininess)

For the dressing:

  • ¼ cup olive oil
  • 2 tablespoons white wine vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • Salt and pepper, to taste

Instructions:

  1. Cook the potatoes:
    • Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for about 10-12 minutes, or until the potatoes are fork-tender. Drain and let them cool slightly. Cut larger potatoes in half or quarters.
  2. Blanch the peas:

    • In a large bowl, combine the cooked potatoes, blanched peas, sliced radishes, green onions, and capers (if using). Pour the dressing over the vegetables and toss gently to coat.
  5. Add fresh herbs:
    • Stir in the fresh herbs, ensuring they are evenly distributed throughout the salad.
  6. Chill and serve:
    • Let the potato salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
