  • Optional: chopped fresh parsley for garnish

Instructions:

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add Garlic and Herbs: Stir in the minced garlic, thyme, rosemary, and bay leaf. Cook for an additional 1-2 minutes until the garlic is fragrant.
  3. Add Split Peas and Ham: Add the rinsed split peas to the pot along with the smoked ham hock or diced bacon. Stir to combine.
  4. Add Broth: Pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1-1.5 hours, stirring occasionally, until the peas are tender and the soup has thickened.
  5. Adjust Seasoning: Remove the ham hock, if used, and shred any meat. Return the meat to the pot. Season the soup with salt and pepper to taste.
