Ingredients:

  • 6 medium-sized tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • ¼ cup breadcrumbs
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried)
  • Salt and pepper, to taste
  • 1 tablespoon butter (optional, for added richness)

Instructions:

  1. Preheat the oven: Set your oven to 375°F (190°C).
  2. Prepare the tomatoes: Slice the tops off the tomatoes and gently scoop out the insides with a spoon, being careful not to puncture the walls. Set the tomato shells aside and finely chop the tomato insides.
  3. Sauté the spinach: In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the chopped spinach and chopped tomato insides. Cook until the spinach wilts and the tomato juices are reduced, about 5 minutes.
