Spinach-Stuffed Chicken Breasts

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped

  • ½ cup cream cheese, softened
  • ¼ cup shredded mozzarella or Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp paprika (optional)
  • Toothpicks for securing

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the chopped spinach to the skillet and cook for 3-4 minutes until wilted. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the cooked spinach, cream cheese, and shredded mozzarella or Parmesan. Stir until well mixed.

  7. In an oven-safe skillet, sear the chicken breasts over medium-high heat for 3-4 minutes on each side, until golden brown.
  8. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  9. Let the chicken rest for a few minutes before slicing and serving.
