Spinach Roll-Ups

Ingredients:

  • 4 large flour tortillas

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach leaves, chopped
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped red bell pepper (optional, for color and crunch)

Instructions:

  1. Prepare the Filling: In a medium bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until smooth and well blended.
  2. Add the Spinach and Mix-Ins: Stir in the chopped spinach, shredded cheese, green onions, and red bell pepper (if using). Mix until all ingredients are evenly distributed.
  3. Assemble the Roll-Ups: Lay out a tortilla on a flat surface. Spread about 1/4 of the spinach mixture evenly over the tortilla, leaving a small border around the edges. Roll the tortilla tightly from one end to the other to form a log.
  4. Chill the Rolls: Repeat with the remaining tortillas and filling. Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes to firm up.
  5. Slice and Serve: Once chilled, remove the plastic wrap and slice each roll into 1-inch pieces. Arrange the slices on a serving platter.
