SPINACH RISOTTO

Spinach Risotto is a creamy and comforting dish that combines tender Arborio rice with fresh spinach, creating a satisfying blend of flavors and textures. Ingredients:

  • 4 cups fresh spinach, roughly chopped

Instructions:

  1. Sauté the aromatics: In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened and fragrant.
  2. Toast the rice: Stir in the Arborio rice, coating it with the oil and cooking for 1-2 minutes until the edges of the rice turn translucent.
  3. Add the wine (if using): Pour in the white wine and cook, stirring constantly, until the liquid is mostly absorbed by the rice.
  4. Cook the risotto: Begin adding the warm broth one ladleful at a time, stirring frequently and allowing the liquid to absorb before adding more. Continue this process for 18-20 minutes, or until the rice is creamy and tender but still slightly al dente.
  5. Add the spinach: Stir in the chopped spinach during the last 5 minutes of cooking, allowing it to wilt into the risotto.
  6. Finish with cheese and butter: Once the risotto is fully cooked, stir in the grated Parmesan cheese and butter. Season with salt, pepper, and a squeeze of fresh lemon juice if desired.
