SPINACH PUFFS

Ingredients:

  • 1 sheet of puff pastry (store-bought or homemade), thawed

Instructions:

  1. Prepare the Spinach Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened. Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted and any excess moisture has evaporated. Remove from heat and let cool slightly.
  2. Make the Filling: In a mixing bowl, combine the sautéed spinach mixture with cream cheese, Parmesan cheese, mozzarella cheese, salt, and pepper. Stir until well combined and smooth.
  3. Prepare the Puff Pastry: Preheat your oven to 375°F (190°C). Unroll the puff pastry sheet on a lightly floured surface. Using a sharp knife or pizza cutter, cut the pastry into 9 equal squares.
  4. Fill and Fold: Place a spoonful of the spinach mixture in the center of each puff pastry square. Carefully fold the corners of each square towards the center, forming a pocket or triangle shape. Press the edges to seal them.
  5. Egg Wash and Bake: Place the filled puffs on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a golden, glossy finish. Bake in the preheated oven for 15-20 minutes, or until the puffs are golden brown and puffed up.
