SPINACH-CHEESE SWIRLS

Spinach-Cheese Swirls are a savory, flaky appetizer or snack, featuring puff pastry filled with a delicious spinach and cheese mixture. These swirls are easy to make and perfect for parties, brunches, or whenever you need a quick and tasty treat. The combination of spinach, garlic, and melty cheese wrapped in buttery puff pastry is irresistible!

Ingredients:

  • 1 sheet frozen puff pastry (thawed)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 5 oz fresh spinach (about 2 cups packed)
  • ½ cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 egg, lightly beaten
  • Salt and pepper, to taste
  • 1 teaspoon dried oregano (optional)
  • 1 egg (for egg wash)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Sauté the spinach:
    • In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 4-5 minutes. Add the minced garlic and cook for another 1 minute, until fragrant.
    • Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  3. Make the filling:
    • In a medium bowl, mix together the ricotta, Parmesan, and mozzarella cheeses. Stir in the cooled spinach mixture, beaten egg, oregano (if using), and season with salt and pepper.
  4. Assemble the swirls:
    • Unroll the thawed puff pastry on a lightly floured surface. Spread the spinach-cheese mixture evenly over the pastry, leaving a small border along one edge.
    • Starting from the opposite edge, tightly roll the puff pastry into a log, similar to how you would roll a cinnamon roll. Brush the edge with a little water to seal the roll.
  5. Slice and prepare for baking:
    • Cut the roll into ½-inch thick slices and arrange the swirls flat on the prepared baking sheet. Brush the tops of the swirls with a beaten egg for a golden finish.
  6. Bake the swirls:
    • Bake in the preheated oven for 15-18 minutes, or until the puff pastry is golden brown and crispy.
  7. Serve:
