Spinach Artichoke Lasagna Roll-Ups are a delicious and unique twist on traditional lasagna. Ingredients:

  • 10 lasagna noodles, cooked according to package instructions
  • 2 cups ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1 cup grated Parmesan cheese, divided
  • 1 cup cooked spinach, chopped and well-drained
  • 1 cup canned artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • 1 egg, lightly beaten
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Filling: In a large bowl, combine the ricotta cheese, ½ cup mozzarella, ½ cup Parmesan, spinach, artichokes, garlic, egg, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Assemble Lasagna Roll-Ups: Lay the cooked lasagna noodles on a flat surface. Spread about 2 tablespoons of the spinach-artichoke mixture evenly over each noodle. Roll each noodle tightly from one end to the other.
  4. Prepare Baking Dish: Spread 1 cup of marinara sauce evenly in the bottom of a 9×13 inch baking dish. Place each roll-up seam-side down in the dish.
  5. Top and Bake: Spoon the remaining marinara sauce over the top of the roll-ups. Sprinkle the remaining mozzarella and Parmesan cheese over the top. Cover the dish with aluminum foil.
  6. Bake: Bake the roll-ups covered for 25 minutes, then uncover and bake for an additional 10 minutes until the cheese is bubbly and golden.
