Spicy Wontons

The wontons are filled with a savory mixture of ground pork, ginger, garlic, and green onions, then served in a spicy, tangy sauce made with chili oil, soy sauce, and black vinegar. Ingredients

For the Wontons:

  • 1/2 pound ground pork
  • 2 tablespoons soy sauce

  • 2 cloves garlic, minced

  • 2 green onions, finely chopped
  • 1/2 teaspoon white pepper

  • 30-40 wonton wrappers

  • 3 tablespoons chili oil (adjust to taste)
  • 2 tablespoons soy sauce
  • 1 tablespoon black vinegar (or rice vinegar)
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon Sichuan peppercorns, crushed (optional for extra heat)
  • 2 tablespoons chicken broth or water

Instructions

  1. Prepare the Filling:
    • In a large bowl, mix together the ground pork, soy sauce, sesame oil, rice wine, garlic, ginger, green onions, white pepper, and salt until well combined.
  2. Assemble the Wontons:
    • Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the filling into the center of the wrapper.
    • Moisten the edges of the wrapper with water. Fold the wrapper in half to form a triangle, pressing the edges to seal.
    • Bring the two corners of the triangle together and press to seal, forming a wonton shape. Repeat with the remaining wrappers and filling.
  3. Cook the Wontons:
    • Bring a large pot of water to a boil. Gently drop the wontons into the boiling water and cook for 4-5 minutes, or until they float to the surface and are fully cooked.
    • Use a slotted spoon to remove the wontons from the water and set them aside.
  4. Make the Spicy Sauce:
    • In a small saucepan, combine the chili oil, soy sauce, black vinegar, sugar, sesame oil, garlic, and Sichuan peppercorns. Heat the mixture over medium heat until warmed through, about 2-3 minutes.
    • Add the chicken broth or water to the sauce to thin it slightly, then remove from heat.
  5. Serve:
    • Place the cooked wontons in a serving dish and pour the spicy sauce over them. Garnish with extra chopped green onions or cilantro if desired.
    • Serve immediately and enjoy!
