Ingredients:

  • For the Tilapia:
    • 4 tilapia fillets
    • 1 tablespoon olive oil
    • 1 teaspoon smoked paprika
    • 1 teaspoon garlic powder
    • 1/2 teaspoon chili powder
    • 1/2 teaspoon cumin
    • Salt and pepper, to taste
  • For the Rice Bowl:
    • 2 cups cooked jasmine or brown rice
    • 1 red bell pepper, thinly sliced
    • 1 cucumber, diced
    • 1 avocado, sliced
    • 1 cup shredded red cabbage
    • 2 tablespoons chopped fresh cilantro
    • 1 lime, cut into wedges
  • For the Spicy Sriracha Mayo:
    • 1/4 cup mayonnaise
    • 2 tablespoons sriracha sauce
    • 1 tablespoon lime juice
    • 1 teaspoon honey (optional)

Instructions:

  1. Prepare the Tilapia:
    • Pat the tilapia fillets dry with paper towels. In a small bowl, mix the smoked paprika, garlic powder, chili powder, cumin, salt, and pepper. Rub this spice mixture evenly over both sides of the tilapia fillets.
    • Heat the olive oil in a large skillet over medium heat. Add the tilapia fillets and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from the skillet and set aside.
  2. Make the Spicy Sriracha Mayo:
    • In a small bowl, whisk together the mayonnaise, sriracha sauce, lime juice, and honey (if using). Adjust the spice level by adding more or less sriracha according to your preference.
  3. Assemble the Rice Bowls:
    • Divide the cooked rice between four bowls. Arrange the cooked tilapia fillets on top of the rice. Add the sliced bell pepper, cucumber, avocado, and shredded cabbage around the tilapia. Sprinkle with fresh cilantro.
  4. Serve:
    • Drizzle the spicy sriracha mayo over the bowls. Serve with lime wedges on the side for an extra burst of freshness. Enjoy your Spicy Tilapia Rice Bowl warm!

Feel free to customize the bowl with additional toppings like pickled red onions, edamame, or roasted corn for extra flavor and texture!
