Spiced Carrot & Lentil Soup

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp ground turmeric
  • 4 large carrots, peeled and chopped
  • 1 cup red lentils, rinsed
  • 1.5 liters (about 6 cups) vegetable broth
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Fresh cilantro, for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and sauté for 5-7 minutes until soft and translucent.
  2. Add the garlic and ginger, cooking for another minute until fragrant.
  3. Stir in the cumin, coriander, and turmeric, allowing the spices to bloom for about 30 seconds.
