Spiced Butternut Squash Soup is a velvety, comforting dish that highlights the natural sweetness of butternut squash with a warm, aromatic blend of spices. Perfect for chilly days, this soup is both hearty and nourishing, with a rich, creamy texture that’s enhanced by the addition of spices like cumin, cinnamon, and nutmeg. It’s simple to make and can be served as an elegant starter or a wholesome main course. A swirl of cream or a sprinkle of toasted seeds adds a beautiful finishing touch to this flavorful fall favorite.

Ingredients

  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • 4 cups vegetable or chicken broth
  • 1/2 cup coconut milk or heavy cream (optional for extra creaminess)
  • Salt and pepper to taste
  • Fresh parsley or cilantro, for garnish
  • Toasted pumpkin seeds or croutons, for topping (optional)

Instructions

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent. Add the garlic and cook for another minute until fragrant.
  2. Add the Spices: Stir in the cumin, cinnamon, nutmeg, and cayenne pepper (if using). Cook the spices for 1-2 minutes to release their aroma.
  3. Cook the Squash: Add the cubed butternut squash to the pot and stir to coat it in the spices. Pour in the vegetable or chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the squash is tender.
  4. Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  5. Add Creaminess: If you prefer a creamier soup, stir in the coconut milk or heavy cream at this stage. Heat the soup gently over low heat, making sure not to bring it to a boil.
  6. Season and Serve: Taste the soup and season with salt and pepper to your liking. Ladle into bowls and garnish with fresh parsley or cilantro, and top with toasted pumpkin seeds or croutons for added texture.

Enjoy your warm, spiced butternut squash soup as a comforting meal or an impressive starter for any occasion!
