Ingredients

  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Lemon wedges (for serving)

Instructions

  1. Sauté the onions and garlic: In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  2. Add the rice and broth: Stir the rice into the onion and garlic mixture, coating it with the olive oil. Add the vegetable or chicken broth, season with salt and pepper, and bring to a simmer.
  3. Cook the rice: Reduce the heat to low, cover, and cook the rice for 10-12 minutes, or until the rice is almost fully cooked.
  4. Add the spinach and herbs: Stir in the chopped spinach, dill, and parsley. Cover again and cook for an additional 5-7 minutes, or until the spinach is wilted and the rice is fully cooked.
  5. Finish with lemon: Remove the spanakorizo from the heat and stir in the lemon juice. Adjust seasoning with salt and pepper to taste.
  6. Serve: Serve warm with lemon wedges on the side for an extra burst of freshness.
