Spaghetti Squash Gratin

Spaghetti squash is a wonderful low-carb alternative to pasta, and in this creamy, cheesy gratin, it transforms into a comforting, satisfying dish. The naturally sweet flavor of the roasted squash pairs beautifully with a rich, cheesy sauce, creating a perfect balance of textures and tastes. Ingredients:

  • 1 large spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • ½ cup sour cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese, divided
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • ½ cup breadcrumbs
  • 2 tablespoons melted butter

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the spaghetti squash: Cut the squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil and sprinkle with salt and pepper. Place the squash halves, cut side down, on the prepared baking sheet and roast for 40-45 minutes, or until the flesh is tender and easily pulled into strands with a fork. Let it cool slightly, then scrape out the strands into a bowl.
  3. Sauté the aromatics: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the garlic and cook for another minute, until fragrant.
  4. Prepare the cheese mixture: In a large bowl, combine the ricotta, sour cream, shredded mozzarella, ¼ cup of Parmesan, thyme, oregano, red pepper flakes (if using), salt, and pepper. Stir in the sautéed onions and garlic.
  5. Combine the squash and cheese mixture: Gently fold the cooked spaghetti squash into the cheese mixture until evenly combined.
  6. Assemble the gratin: Transfer the mixture to a greased 9×13-inch baking dish. In a small bowl, mix the breadcrumbs, the remaining ¼ cup of Parmesan, and melted butter. Sprinkle the breadcrumb mixture evenly over the top of the gratin.
  7. Bake the gratin: Bake at 400°F (200°C) for 20-25 minutes, or until the top is golden brown and crispy.
  8. Serve: Let the gratin cool for a few minutes before serving. Enjoy it as a hearty side dish or a light main course!
