- ½ cup grated Parmesan cheese, divided
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano

- ½ cup breadcrumbs
- 2 tablespoons melted butter
Instructions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the spaghetti squash: Cut the squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil and sprinkle with salt and pepper. Place the squash halves, cut side down, on the prepared baking sheet and roast for 40-45 minutes, or until the flesh is tender and easily pulled into strands with a fork. Let it cool slightly, then scrape out the strands into a bowl.
