Southwestern Casserole

This Southwestern Casserole is a hearty, flavor-packed dish that’s perfect for a family dinner or a potluck gathering. Combining the robust flavors of seasoned ground beef, black beans, corn, and a blend of spices, this casserole is topped with melted cheese that adds a creamy richness. Ingredients:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (8 oz) tomato sauce
  • 1 packet (1 oz) taco seasoning
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 cups shredded Mexican cheese blend
  • 4 cups tortilla chips, slightly crushed
  • Salt and pepper, to taste
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat. As the beef is browning, add the chopped onion, green bell pepper, and minced garlic. Cook until the vegetables are softened, about 5-7 minutes.
  3. Add the black beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, cumin, and chili powder to the skillet. Stir everything together and let it simmer for 5 minutes to allow the flavors to meld. Season with salt and pepper to taste.
  4. In a large casserole dish, spread a layer of crushed tortilla chips at the bottom. Pour the beef and vegetable mixture over the chips, spreading it evenly.
  5. Top the casserole with the shredded cheese, making sure it’s evenly distributed.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
