South Texas Carne Guisada

Carne Guisada is a beloved Tex-Mex dish that hails from the heart of South Texas. This savory, slow-cooked beef stew is rich in flavor, thanks to the perfect blend of spices and the long simmering process that tenderizes the meat to perfection. Traditionally served with warm flour tortillas, rice, and beans, Carne Guisada is a comforting and hearty meal that brings the taste of the Lone Star State to your table. The dish is perfect for gatherings or a cozy family dinner, as it fills the kitchen with an irresistible aroma that will have everyone eager to dig in.

Ingredients:

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 (8 oz) can tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 1/2 cup water (as needed)
  • Fresh cilantro, chopped (for garnish)
  • Warm flour tortillas (for serving)

Instructions:

  1. Brown the Beef: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown on all sides, working in batches if necessary to avoid overcrowding the pot. Remove the browned meat and set it aside.
  2. Sauté the Vegetables: In the same pot, add the chopped onion and green bell pepper. Sauté until the onion is translucent and the pepper is softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  3. Create the Base: Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste. Gradually add the beef broth, stirring constantly to avoid lumps.
  4. Add the Tomato Sauce and Spices: Stir in the tomato sauce, cumin, chili powder, paprika, oregano, black pepper, salt, and cayenne pepper. Mix well to combine all the flavors.
  5. Simmer the Meat: Return the browned beef to the pot, ensuring the meat is fully submerged in the liquid. If needed, add up to 1/2 cup of water to ensure the beef is covered. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  6. Serve: Once the Carne Guisada is ready, adjust the seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh cilantro, alongside warm flour tortillas, rice, and beans.

Enjoy this delicious South Texas classic with family and friends!
