Sopes are a traditional Mexican dish made from thick corn masa cakes that are crispy on the outside and soft in the center, perfect for holding an array of toppings. Sopes are often served with refried beans, crumbled cheese, fresh salsa, and your choice of meats like chicken, beef, or pork. Ingredients:

For the Sopes:

  • 2 cups masa harina (corn flour)
  • 1 ¼ cups warm water

Instructions:

  1. Make the Dough: In a large bowl, mix the masa harina and salt. Gradually add the warm water, stirring until the dough comes together. Knead for a few minutes until it is smooth and slightly moist but not sticky. Cover the dough with a damp cloth and let it rest for 10 minutes.
  2. Shape the Sopes: Divide the dough into 10-12 equal portions and roll each into a ball. Flatten each ball into a disc about 3-4 inches wide and about ½ inch thick. Use your fingers to pinch up the edges slightly, forming a small “rim” around each sope.
  3. Cook the Sopes: Heat a large skillet or griddle over medium-high heat. Cook the sopes, a few at a time, for 2-3 minutes on each side until they develop a slight golden color and firm up.
  4. Fry the Sopes: In a separate skillet, heat about ½ inch of vegetable oil over medium heat. Fry the cooked sopes in batches for 1-2 minutes on each side, until golden and crispy. Drain on paper towels.
  5. Assemble the Sopes: Spread a layer of refried beans on each sope and top with your desired toppings like shredded lettuce, crumbled cheese, salsa, avocado, and your choice of protein. Finish with a drizzle of sour cream or crema.
