Layers of graham cracker crust, creamy chocolate ice cream, and toasted marshmallow topping make this cake an irresistible summer treat, perfect for hot days or any gathering. With its delightful combination of textures and flavors, this ice cream cake is a crowd-pleasing, indulgent dessert that transforms the beloved s’mores into a cool and creamy experience.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1.5 quarts chocolate ice cream, softened
  • 1 jar (7 oz) marshmallow fluff
  • 1/2 cup mini marshmallows (for topping)
  • 1/2 cup chocolate chips (for topping)
  • 1/4 cup hot fudge sauce (optional)

Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are well coated. Press the mixture evenly into the bottom of a 9-inch springform pan or a deep pie dish. Freeze the crust for 10-15 minutes to set.
  2. Layer the ice cream: Spread the softened chocolate ice cream evenly over the graham cracker crust. Smooth the top and place it in the freezer for at least 1-2 hours, or until the ice cream is firm.
  3. Add the marshmallow layer: Once the ice cream is firm, spread a generous layer of marshmallow fluff over the top of the ice cream. For an extra toasty effect, use a kitchen torch to lightly brown the marshmallow fluff.
  4. Top and freeze: Sprinkle mini marshmallows and chocolate chips over the marshmallow layer. Drizzle with hot fudge sauce if desired. Place the cake back in the freezer for at least 2-3 hours or until fully set.
  5. Serve: Remove the cake from the freezer and let it sit for 5-10 minutes before slicing. Use a sharp knife to cut through the layers and serve immediately.

This S’mores Ice Cream Cake is the perfect blend of campfire fun and frozen indulgence, making it a show-stopping dessert for any summer gathering!
