Ingredients:

  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1 lb smoked sausage, sliced into rounds
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Spaghetti Squash: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the cut sides with olive oil and season with salt and pepper. Place the squash halves cut side down on a baking sheet and roast for 40-45 minutes, or until the flesh is tender and easily shredded with a fork.
  2. Cook the Sausage and Vegetables: While the squash is roasting, heat a large skillet over medium heat. Add the smoked sausage slices and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté until softened, about 5 minutes. Add the minced garlic, Italian seasoning, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until fragrant.
  4. Combine and Cook: Once the spaghetti squash is done roasting, use a fork to scrape the flesh into strands. Add the spaghetti squash strands to the skillet with the vegetables, tossing to combine. Add the cooked sausage back into the skillet and stir everything together. Cook for another 2-3 minutes to allow the flavors to meld.
  5. Serve: Serve the smoked sausage and spaghetti squash mixture hot, topped with grated Parmesan cheese and fresh parsley if desired. Enjoy as a hearty, flavorful meal that’s both comforting and nutritious.
