Smoked Fish Pie

Ingredients:

  • 1 pound smoked white fish (such as haddock or cod), skin removed and flaked
  • 1 pound potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1 cup frozen peas
  • 1 tablespoon chopped fresh dill (optional)
  • Salt and pepper, to taste
  • ½ cup grated cheddar cheese (optional)

Instructions:

  1. Cook the Potatoes: Place the potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and mash with 2 tablespoons of butter and a splash of milk until smooth. Season with salt and pepper. Set aside.
  2. Prepare the Sauce: In a large saucepan, melt the remaining 2 tablespoons of butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  3. Make the White Sauce: Sprinkle the flour over the onions and garlic, stirring constantly for 1-2 minutes to cook out the raw flour taste. Gradually whisk in the milk and cream, and cook until the sauce thickens, about 5 minutes. Stir in the mustard, and season with salt and pepper.
  4. Assemble the Pie: Preheat your oven to 375°F (190°C). Gently fold the flaked smoked fish, peas, and dill into the white sauce. Pour the mixture into a baking dish. Spread the mashed potatoes evenly over the top of the fish mixture. For an extra touch, sprinkle the grated cheddar cheese over the mashed potatoes.
  5. Bake: Place the pie in the preheated oven and bake for 25-30 minutes, or until the top is golden and the filling is bubbling around the edges.
