Slow Cooker Stuffing

Slow Cooker Stuffing is the perfect solution for freeing up oven space during holiday feasts or any large gathering. Ingredients:

  • 12 cups cubed bread (day-old, preferably a mix of white and whole wheat)
  • 1/2 cup unsalted butter
  • 1 large onion, diced
  • 3 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 1/2 tsp dried sage
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper, to taste
  • 2 1/2 cups chicken or vegetable broth
  • 2 large eggs, beaten
  • 1/4 cup fresh parsley, chopped
  • Optional: 1/2 cup chopped nuts or dried cranberries for added texture and flavor

Instructions:

  1. Prepare the bread: Spread the cubed bread on a baking sheet and let it sit out overnight to dry, or bake in a 300°F (150°C) oven for 15-20 minutes, stirring occasionally, until slightly toasted.
  2. Cook the vegetables: In a large skillet, melt the butter over medium heat. Add the diced onion and celery and sauté for about 5-7 minutes, until softened. Add the garlic, sage, thyme, rosemary, salt, and pepper, and cook for another minute until fragrant.
  3. Mix the stuffing: In a large bowl, combine the toasted bread cubes with the sautéed vegetables. Stir in the chicken or vegetable broth, beaten eggs, and fresh parsley. Toss until the bread is evenly moistened, adding more broth if needed to reach your desired consistency.
  4. Transfer to the slow cooker: Grease the inside of your slow cooker and transfer the stuffing mixture into it. Cover and cook on low for 4-5 hours or on high for 2-3 hours, stirring once halfway through. For a crisper top, leave the lid slightly ajar during the last 30 minutes of cooking.
  5. Serve: Fluff the stuffing with a fork before serving. Garnish with additional parsley or your favorite toppings.
