Ingredients:

  • 1 1/2 lbs flank steak or skirt steak, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (optional for more moisture)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional for heat)
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 8-10 small flour or corn tortillas
  • Optional toppings: sour cream, guacamole, shredded cheese, salsa, cilantro

Instructions:

  1. In a slow cooker, layer the sliced steak, bell peppers, onions, and garlic.
  2. In a small bowl, whisk together the chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper. Sprinkle the spice mixture evenly over the steak and vegetables.
  3. Drizzle the olive oil and lime juice over everything. If you prefer a saucier fajita, pour in the diced tomatoes.
