Ingredients:

  • 3-4 lb pork shoulder (pork butt), trimmed of excess fat
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • Corn or flour tortillas, for serving

Toppings (optional but recommended):

  • Shredded lettuce or cabbage
  • Diced tomatoes
  • Fresh cilantro
  • Sliced avocado or guacamole
  • Sour cream
  • Salsa or pico de gallo
  • Lime wedges

Instructions:

  1. Prepare the Pork: Rub the pork shoulder with chili powder, smoked paprika, cumin, oregano, cayenne (if using), salt, and pepper. Make sure the pork is evenly coated with the spices.
  2. Assemble in the Slow Cooker: In the bottom of your slow cooker, add the chopped onion and minced garlic. Place the seasoned pork shoulder on top of the onions. Pour the chicken broth, apple cider vinegar, and brown sugar around the pork.
  3. Cook the Pork: Cover and cook on low for 8-10 hours, or until the pork is tender and easily pulls apart with a fork. Alternatively, cook on high for 5-6 hours.
  4. Shred the Pork: Once the pork is done, remove it from the slow cooker and use two forks to shred the meat. Discard any large pieces of fat. Return the shredded pork to the slow cooker and mix it with the juices to keep the meat moist and flavorful.
  5. Assemble the Tacos: Warm the tortillas and spoon a generous amount of pulled pork into each one. Top with your favorite toppings such as shredded lettuce, tomatoes, cilantro, avocado, sour cream, salsa, and a squeeze of fresh lime juice.
  6. Serve: Serve the Slow Cooker Pulled Pork Tacos hot, allowing everyone to customize their tacos with their preferred toppings.

These Slow Cooker Pulled Pork Tacos are tender, flavorful, and incredibly easy to make, offering a perfect meal for taco lovers that’s sure to impress with minimal effort!
