Slow-Cooker Citrus Carrots

Slow-Cooker Citrus Carrots are a bright and flavorful side dish that’s both effortless and delicious. Cooked to tender perfection in the slow cooker, these carrots absorb the tangy sweetness of fresh orange juice and the zestiness of lemon, creating a dish that’s refreshing and vibrant. The slow-cooker method allows the carrots to become perfectly tender while the citrus glaze, enhanced with a touch of honey and butter, provides a luscious coating. This is a perfect side for holiday gatherings or weeknight meals, complementing everything from roasted meats to lighter dishes like fish or poultry.

Ingredients:

  • 2 lbs carrots, peeled and cut into 2-inch pieces
  • 1/4 cup butter, melted
  • 1/4 cup honey
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • 1 teaspoon ground cinnamon (optional)
  • Salt and pepper, to taste
  • Fresh parsley or thyme for garnish (optional)

Instructions:

  1. Prepare the slow cooker: Lightly grease the inside of your slow cooker with cooking spray or butter. Place the peeled and cut carrots inside.
  2. Make the citrus glaze: In a small bowl, whisk together the melted butter, honey, orange zest, orange juice, lemon zest, lemon juice, and cinnamon (if using). Season with a pinch of salt and pepper.
  3. Cook the carrots: Pour the citrus glaze over the carrots, making sure they are evenly coated. Cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours, until the carrots are tender.
  4. Finish and serve: Once the carrots are cooked through, give them a gentle stir to coat them in the glaze. Transfer to a serving dish and garnish with fresh parsley or thyme, if desired.

These Slow-Cooker Citrus Carrots are a perfect balance of sweet, tangy, and buttery flavors, making them a crowd-pleasing side dish that adds a pop of color and brightness to any meal!
