Slow Cooker Carne Asada

Carne Asada is a flavorful and tender Mexican dish traditionally grilled to perfection. This slow cooker version takes all the classic flavors—lime, garlic, cilantro, and spices—and combines them with the ease and convenience of slow cooking. The result is tender, juicy beef that’s infused with rich, smoky flavor, perfect for tacos, burritos, or simply serving with rice and beans. By using the slow cooker, you allow the meat to marinate and cook in its own juices, resulting in a melt-in-your-mouth texture without the need for constant attention.

Ingredients:

  • 2 lbs flank or skirt steak
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup orange juice
  • 1/4 cup lime juice (about 2-3 limes)
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1 small onion, sliced
  • 1 jalapeño, sliced (optional)
  • Tortillas, for serving
  • Lime wedges, for serving

Instructions:

  1. Prepare the marinade: In a medium bowl, combine the garlic, cilantro, orange juice, lime juice, olive oil, soy sauce, Worcestershire sauce, cumin, paprika, chili powder, salt, and pepper. Mix well.
  2. Marinate the steak: Place the flank or skirt steak in the slow cooker. Pour the marinade over the steak, making sure it’s well-coated. Add the sliced onion and jalapeño on top for extra flavor. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Slow cook the steak: Set your slow cooker to low and cook for 6-8 hours, or until the steak is tender and easily pulls apart with a fork.
  4. Shred and serve: Once cooked, remove the steak from the slow cooker and shred it into bite-sized pieces. Return the shredded steak to the slow cooker and mix it with the juices to ensure the meat stays moist and flavorful.
  5. Assemble: Serve the carne asada in warm tortillas, topped with your favorite garnishes like cilantro, avocado, salsa, and a squeeze of lime.

Enjoy your tender, juicy Slow Cooker Carne Asada with all the flavors of the classic Mexican dish!
