SLOW COOKER BEEF CURRY

This Slow Cooker Beef Curry is a rich, flavorful dish that’s easy to prepare and perfect for any day of the week. Tender chunks of beef are simmered in a blend of aromatic spices and coconut milk, making for a comforting and hearty meal. Serve it with rice or naan for a delicious dinner.

Ingredients:

  • 1½ pounds beef stew meat, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced

  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric

  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil (for browning the beef)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Brown the beef (optional but recommended):
    • Heat the vegetable oil in a large skillet over medium-high heat. Season the beef with salt and pepper. Add the beef to the skillet in batches, browning the pieces on all sides for about 3-4 minutes. Transfer the browned beef to the slow cooker.
  2. Sauté the aromatics:
    • In the same skillet, add the chopped onion, minced garlic, and ginger. Sauté for 2-3 minutes until softened and fragrant. Add the curry powder, cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Stir well and cook for another minute to toast the spices.
  3. Transfer to slow cooker:
    • Add the sautéed onion and spice mixture to the slow cooker along with the diced tomatoes, coconut milk, beef broth, and tomato paste. Stir everything together to combine.
  4. Cook the curry:
    • Cover and cook on low for 6-8 hours or high for 4-5 hours, until the beef is tender and the flavors have melded. Stir occasionally if possible.
  5. Finish and serve:
    • Taste and adjust the seasoning with more salt or pepper if needed. Serve the beef curry hot, garnished with fresh cilantro, over rice or with naan.
