Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil
  • 2 tbsp butter

  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Chicken: Place each chicken breast between sheets of plastic wrap or parchment paper. Use a meat mallet to pound each breast to about 1/4-inch thickness. Season with salt and black pepper.
  2. Stuff the Chicken: Place a slice of ham and a slice of Swiss cheese on each chicken breast. Fold or roll up each breast and secure with toothpicks.
  3. Coat the Chicken: Place the flour, beaten egg, and breadcrumbs in three separate shallow dishes. Dredge each stuffed chicken breast in the flour, dip in the egg, then coat with breadcrumbs.
  4. Cook the Chicken: Heat the olive oil and butter in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
