Perfect for a family dinner or a casual gathering, these enchiladas are easy to prepare and deliver authentic flavors with minimal effort. Serve with rice, beans, and a side of guacamole for a complete and satisfying meal.

Ingredients:

  • 12 corn tortillas
  • 2 cups cooked, shredded chicken (or substitute with shredded cheese for a vegetarian version)
  • 2 cups salsa verde (store-bought or homemade)
  • 1 cup sour cream
  • 2 cups shredded Monterey Jack or Oaxaca cheese
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup diced onions (optional)
  • Salt and pepper to taste
  • Lime wedges for serving (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Prepare the Filling: In a medium bowl, mix the shredded chicken with 1/2 cup of the salsa verde, 1/2 cup of the shredded cheese, and diced onions if using. Season with salt and pepper to taste.
  3. Warm the Tortillas: Heat the corn tortillas in a dry skillet over medium heat for a few seconds on each side to make them pliable. Alternatively, you can microwave them in a damp towel for 30 seconds.
  4. Assemble the Enchiladas: Place a spoonful of the chicken mixture (or shredded cheese for a vegetarian option) down the center of each tortilla. Roll up the tortillas tightly and place them seam-side down in the prepared baking dish.
  5. Add the Sauce and Cheese: Pour the remaining salsa verde over the rolled tortillas, spreading it evenly. Dollop the sour cream on top and sprinkle with the remaining shredded cheese.
  6. Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Serve: Garnish with chopped fresh cilantro and serve hot with lime wedges on the side. Enjoy these flavorful and comforting enchiladas verdes!
