Shrimp Spring Rolls

Shrimp Spring Rolls are a fresh, light, and vibrant appetizer or meal, packed with deliciously crisp vegetables, succulent shrimp, and fragrant herbs all wrapped in delicate rice paper. These rolls are perfect for a healthy snack or as a refreshing side dish. Paired with a tangy peanut dipping sauce or a sweet chili sauce, these spring rolls bring a balance of textures and flavors that make them irresistible. The best part? Ingredients:

  • 12 large shrimp, peeled, deveined, and cooked
  • 8 rice paper wrappers
  • 1 cup lettuce leaves, chopped
  • 1/2 cup carrots, julienned
  • 1/2 cup cucumber, julienned
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup rice vermicelli noodles, cooked (optional)

For the Peanut Dipping Sauce:

  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp lime juice
  • 1 tsp honey
  • Water, to thin

Instructions:

  1. Prepare the Ingredients: Cook and cool the shrimp. Slice each shrimp in half lengthwise. Prepare all the vegetables and herbs, and cook the vermicelli noodles if using.
  2. Prepare the Rice Paper: Fill a large shallow dish with warm water. Submerge one rice paper wrapper in the water for about 10-15 seconds until softened. Remove and place it on a damp, clean kitchen towel or a cutting board.
  3. Assemble the Rolls: Place a small amount of lettuce, carrots, cucumber, bell pepper, and herbs in the center of the rice paper. Add 2 shrimp halves and a small portion of vermicelli noodles (if using). Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly like a burrito.
  4. Repeat: Repeat the process with the remaining ingredients.
  5. Make the Peanut Sauce: In a small bowl, whisk together peanut butter, soy sauce, hoisin sauce, lime juice, honey, and water until smooth. Add water gradually to reach your desired consistency.
  6. Serve: Serve the shrimp spring rolls with the peanut dipping sauce or your favorite dipping sauce.
