Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp vegetable oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- ¼ cup soy sauce
- 2 tbsp oyster sauce (optional)
- 1 tbsp honey or brown sugar
- 1 tsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water (optional for thickening)
- Sesame seeds and green onions (optional, for garnish)
Instructions:
- Prepare the shrimp: Pat the shrimp dry with paper towels and season with a pinch of salt and pepper.
- Cook the shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2–3 minutes, or until they turn pink and opaque. Remove from the skillet and set aside.
- Stir-fry the vegetables: In the same skillet, add the remaining tablespoon of oil. Add the garlic, ginger, bell pepper, zucchini, broccoli, and carrot. Stir-fry for 4–5 minutes until the vegetables are crisp-tender.
- Make the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, honey (or brown sugar), and sesame oil. If using cornstarch, add the mixture to thicken the sauce.
- Combine and serve: Return the shrimp to the skillet and pour the sauce over the shrimp and vegetables. Stir to coat everything in the sauce and cook for another 1–2 minutes until heated through. Serve hot over rice or noodles, garnished with sesame seeds and green onions if desired.
