SHISH KEBAB

Instructions:

  1. Prepare the Marinade: In a large bowl, combine olive oil, lemon juice, minced garlic, cumin, paprika, coriander, turmeric (if using), black pepper, and salt. Whisk until well combined.
  2. Marinate the Meat: Add the cubed chicken or beef to the marinade, tossing to coat the meat evenly. Cover and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to meld.
  3. Prepare the Vegetables: While the meat is marinating, cut the vegetables into similar-sized pieces (bell peppers, onions, zucchini). Set them aside.
  4. Assemble the Kebabs: Preheat your grill or broiler to medium-high heat. Thread the marinated meat and vegetables onto the skewers, alternating between meat and vegetables for color and flavor.
  5. Grill the Kebabs: Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the meat is fully cooked and slightly charred on the outside. If using a broiler, place the skewers on a baking sheet and broil for about 8-10 minutes, turning halfway through.
