Schaum Strawberry Torte

Schaum Strawberry Torte is a light and airy dessert that’s perfect for showcasing fresh strawberries. This traditional German dessert features a delicate meringue base that’s crisp on the outside and marshmallow-soft on the inside, topped with sweetened whipped cream and juicy, ripe strawberries. The contrast between the crunchy meringue, creamy topping, and fresh fruit creates a delightful combination of textures and flavors. This torte is ideal for spring and summer gatherings, offering a refreshing and elegant way to end a meal.

Ingredients:

For the Meringue:

  • 4 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch

For the Topping:

  • 1 pint fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 teaspoon lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 275°F (135°C). Line a baking sheet with parchment paper and draw a 9-inch circle on the parchment as a guide.
  2. Make the meringue: In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, while beating on high speed. Continue to beat until stiff, glossy peaks form. Gently fold in the vanilla extract, vinegar, and cornstarch until just combined.
  3. Shape the meringue: Spoon the meringue onto the prepared baking sheet, spreading it within the drawn circle. Use a spatula to create a slight depression in the center, which will hold the strawberries and cream.
  4. Bake the meringue: Bake in the preheated oven for 1 hour. Turn off the oven and leave the meringue inside to cool completely, about 2 hours. The meringue should be crisp on the outside and slightly soft inside.
  5. Prepare the strawberries: While the meringue is cooling, toss the sliced strawberries with granulated sugar and lemon juice in a bowl. Let them sit for about 15-20 minutes to macerate.
  6. Whip the cream: In a chilled mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract together until soft peaks form.
  7. Assemble the torte: Once the meringue has cooled completely, transfer it to a serving platter. Top the meringue with the whipped cream, spreading it evenly. Spoon the macerated strawberries over the whipped cream.
  8. Serve: Slice the Schaum Strawberry Torte and serve immediately.

Enjoy your Schaum Strawberry Torte as a delightful, elegant dessert that’s perfect for any occasion!
